This is The Best Chicken Biscuit Sandwich in NYC

Biscuits are all about technique. You can put the same exact ingredients in identical portions in front of two different chefs and get wildly varied results.

Top Chef finalist Adrienne Cheatham chose the chicken biscuit sandwich at Butterfunk Biscuit Co. in Harlem as her selection for Best Dish Ever.

She says a perfect biscuit should be light and fluffy on the inside, crisp on the outside, with pronounced layering throughout. The golden top is shiny with melted butter that has been painted on.

“Biscuits are deceptively simple,” she said. “And the ones made by [Butterfunk Chef Chris Scott] are absolutely perfect."

There’s an intensity to everything Chef Chris does and you can taste it in his cuisine. He takes his biscuits seriously.

The ingredients are straightforward: butter milk, flour, butter, salt. But it's how he treats those ingredients that become the magic. Everything in this recipe must remain cold throughout the entire baking process.

"This recipe in my hands creates something special," Chef Scott said as he rolled out one of his batches. "It's not just a lump of bread. Its memories."

Chef Scott says the recipe can be traced back to his enslaved ancestors in the south. This biscuit recipe passed from his great-grandmother to his grandmother to all of his aunts.

“It’s changed through the generations as it was passed down, from my aunts to myself,” he said. “This recipe is a part of my family’s history.”

In 2018, that family recipe took him to the final of Top Chef Season 15. But the biscuit is just one part of Chef Cheatham’s selection for her Best Dish Ever. The chicken is just as important as the biscuit in a chicken biscuit sandwich.

Chef Scott's lemonade fried chicken starts with boneless chicken thighs that are marinated in a mixture of lemon juice, buttermilk and hot sauce along with some spices giving the meat an incredible zesty flavor. The thighs are lightly breaded and fried to perfection then sprinkled with a sweet lemon salt.

House made Pimento cheese spread and bread and butter pickles are added before its drizzled with house made hot honey.

“This sandwich is the work of a chef at the top of his game,” Cheatham said.
